Like Nightmon, I wouldn't want to have a monotype gym. But if I had to choose? Water. I always have trouble picking a water-type for my party, because there's so many that I like!
Feraligatr or an earlier evolution would certainly be on my team, and I think I'd like Politoed, Gyarados and Slowbro on my team as well, if we're going with the water-only theme. I'm not sure of the others, yet, but if I think up a good team, I'll edit my answer to this.
